What's for Dinner, Sat., May 23, 2020

Pork loin roast with cipollini, carrots, and potatoes.

Salad made with cabbage, roasted corn, dill, and vinaigrette. Dill is fresh cut from my garden. Here's a pic of my young dill patch:

For dessert, peanut butter cookies and ginger tea.

3. So far, herbes de Provence potatoes

Red potatoes, cut up along with sweet onion, and sprinkled with olive oil and herbes de Provence. Put a piece of parchment paper in a baking pan, with a couple of teaspoons of water underneath the parchment paper to give everything a good steam. Put the potato mixture into the pan, cover it with tinfoil, and bake it at 400° for about 55 minutes. Take the tinfoil off, and bake it another 15 minutes to brown the potatoes on the top. Eat it with ketchup or without. If you want to do something patriotic, you can use a combo of red, white and blue potatoes.
It is my go to starchy side dish. I use Trader Joe’s brand herbes de Provence.

Lesna is a kielbasa seasoned with juniper and placzki the requisite potato pancakes. Probably should add in a green vegetable or something.
