Egg baked in avocado

I tried it for the first time today. Avocados have been cheap lately at the groc so I have been buying more. Googled some other ways to use them and found this way to (basically) poach an egg.

I think it is more trouble than it is worth. Tho the flavors do go well together.

I used a slice of bacon under the avocado half, then precooked both to make sure the bacon was properly done and the egg was hitting hot avocado flesh. Scooped out a little flesh too. Cracked the egg right in the avocado. After about 15-20 min I had a mostly cooked egg. Served with toasted baguette to dip in the yolk.

I probably won’t go to the trouble again tho. I like other combinations better.

7. I used a persoanl pie tin

And curled the bacon slice. Muffin tins would work too. The avocado stayed in skin and nested there. After precook- About ten min. I cracked the egg into the ‘cado. (😁 and baked another ten min. Overall a little less cooked than I prefer. Decent taste but not worth extra effort.

2. So next time,

Baked bacon slices, over medium fried egg & mashed avocados with a toasted baguette to dip egg & then into mashed avocado?

4. I've made

Mashed avocados on top of toasted whole grain bread, topped with a frief egg & a touch of salsa. Healthy breakfast for me

5. 'Cados are one of my

favorite foods, especially this time of year when they are abundant and cheap. I tried avocado toast last year. Didn't have a recipe, just spread it on toast and wasn't thrilled. I prefer the old warm tortilla. BUT, I haven't tried it with egg so I am looking forward to my healthy breakfast tomorrow.
