2. Quick Jambalaya

First I take one of the hotdog-size Johnsonville Andouillesausages, slice it and render it a little bit in a small saucepan with some olive oil. I chop up some serano pepper, garlic, onion and halve a few cherry tomatoes. Add to the saucepan and cook for a few minutes. Then I pour in a can of Campbells Homestyle Chunky Chicken & Sausage Jambalaya. Add some water and chopped cilantro. Stir, then I crack an egg in the center. I bring it to a boil, then cover & simmer it for 10 minutes. Topped with some chopped green onion.

Less than half an hour, and things like that are pretty good to make when there's no one else here.

He cooks weeknights, due to our working schedules. So, he's fixing poutine, with some mojo pork added. For his birthday dessert, he's making yellow cake with whipped cream and strawberries.

All you can eat. We don't go often, everything is pretty much deep fat fried and will make you very fat if enjoyed too often. But for the occasional "pig out" night, we LOVE it.

We waited extra-long at a doctor's appointment, and ran out of time for my planned roast chicken. I'm trying to stick to my low-carb diet before next weeks's NYC-aganza, so I'll just make myself a bacon and cheese omelette.
