Hi guys. Long time no see. Gumbo tonight.

Miz t. is creating. Dark roux, chicken, Conecuh sausage, local bay shrimp.
Cornbread.
Can't wait.

She's Cajun and kinda makes it up as she goes along.

the google says it is Cajun hickory smoked sausage from Conecuh County, Alabama.

Conecuh county is just about an hour or so up I-65 from us, but we buy it at the local Winn Dixie.

One quarter will go with the spaghetti tonight and the other quarter will go into a zip lock bag and popped in the freezer for some other night.
