My Summer Vegetable Sammich Recipe

Now is the time: the season is at its height, so here's what I like to do:

First, buy or make a loaf of bread that's kinda' unusual. Currently I have jalopeno-cheddar bread.

Use butter or mayo as a spread. Sprinkle chopped herbs over the spread. I like marjoram or oregano, basil, chives.

OR

take a chipotle pepper from a can. Using some of the sauce, spread it around on the mayo or butter.

Then layer sliced zucchini (I prefer the yellow zucchini). I saute this in a pan with herbs first, but it's actually better grilled.

Layer in a roasted pepper slice, a roasted tomato, and a slice of raw red onion (thinly sliced).

Then a big slice of mozzarella.

Now THIS is summer!

No order:

Roasted red peppers (usually has olive on and garlic from grilling) with pecorino romano cheese.

Tomato with mayo and S&P. Nothing more. (When I say "tomato", I'm talking softball sized, so that one thick slice is all I need. Sadly, I haven't seen a tomato like that since I left Rhode Island.)
