Ritz Crackers, sugar and spices. There were no apples in it, but believe it or not, it really did taste like an apple pie.

the Depression and fed people who had no money. They made chili and to stretch the food they added cubed potatoes to the chili. I still make chili with the potatoes. It's delicious.

kielbasa and potatoes. The main difference is that I parboil the potatoes first, and I fry up the sliced kielbasa before adding it to the potatoes. Sometimes I also add onion as she does here.

Fish cakes made with canned fish, cornmeal and egg formed into patties and fried in hot lard.

Here is how you could tell how poor you were.

Used sockeye salmon - a little poor
Used pink salmon - poor
Used Chum salmon- very poor
Used Mackerel - poorest of all

I grew up on a little farm in western PA.
Don't know what kind of salmon my mom used.

As I recall, she served it with a creamed green pea sauce on it.
