What's for Dinner, Sun., June 25, 2017

Cold lobster and shrimp tortellini. No sauce, just a little olive oil drizzled over.

Salad is sliced beets, toasted pecans, goat cheese, and greens.

Tapioca pudding and red grapes topped with toasted almonds.

My late Calabrese MIL's recipe with ricotta and hard boiled egg. Dessert we are walking to Rita's with the dog!

I made a late '50s - early '60s style dinner of flounder fillets, rolled/stuffed with chopped onion, celery, carrots, and red peppers, and a topping of mayo, Dijon, and parm. Sounds lame but was actually good

Speaking of, I have plenty of nice sage leaves out there right now, just need some good tortellini (made by someone else).

Sounds like plenty of Parm last night also. Here it was browned chicken thighs braised in a broth of shiitakes, shallots, garlic and thyme with asparagus laid over the top, served in pasta bowls with grated Parmesan and more chopped thyme. Good, but too involved in a good novel to think of squeezing some lemon in to liven the flavor a bit. Tomorrow. (I usually cook for 2 for 2 days.)
