Mexican Meatloaf

Ingredients
1/2 c celery, chopped
1 yellow onion, chopped
1/2 c minced carrot
1/4 c green pepper, chopped
1/2 c red pepper, chopped
1/2 t pepper
2 garlic cloves, minced
1 1/2 T cumin
1 t nutmeg
3/4 c fresh salsa
2 pounds ground beef
1 c bread crumbs
1 c green olives, chopped

Directions
Saute celery, onions, peppers, and garlic in oil until softened. Then mix all ingredients thoroughly, form into two loaves, top with ketchup (I used a spicy Indian ketchup), and bake at 350 for 50-55 minutes. Let rest 10 minutes before slicing.

I sub crushed tortilla chips for the bread crumbs. I've never added olives but I will next time
