I think I'm going to make a recipe I made last week. It was so delicious I cannot get it out of my mind. That was the pork vindaloo. It's made in the pressure cooker.
I was at the market this a.m. and bought the pork.
Also want to make another salad and some mixed vegetables. This salad will have radicchio, red leaf lettuce, and arugula in it. The mixed vegetables will be cauliflower, green beans, and carrots. I'm thinking of fresh lemon-garlic sauce over them. On the other hand, I might just lightly steam those vegetables and use red pepper/yogurt dipping sauce and make it an appetizer.

(14,733 posts)It was a 'seasonal' pizza at a place we hadn't been to before, and we stopped in and had it for lunch. Really good, and when I asked them how long the 'season' was, they said tomorrow was the last day, so we slid in just under the wire.

(2,016 posts)with tortilla chips. I defrosted it from a batch I made last week, and I noticed it wasn't as spicy as when first made. Go figure.

(35,653 posts)The RG showed up from a business trip, which is great because now he can enjoy the pork vindaloo with me.
I am amending my vegetables, though, because he doesn't like green beans unless they are very small. We'll just have an endive salad with tomato.
