Cooking & Baking
Related: About this forumWhat's for dinner, Sunday April 12th?
It's getting late, and no one's posted yet (probably because it's been impossible to access the site for hours), so I thought I'd get it up here. (Once I do, I'll come back and edit my post for my own contribution.)
ETA:
Put pinto beans in the slow cooker around noon on high with just water, a little more than just to cover. (The temp on this hot slow cooker when on high is very, very hot, so the water's cooked down pretty quickly, and I've added a little more water twice.)
At the half way point, I added my leftover ham bone, and smoked sausage (cut into cubes), diced red onion, 4-5 small cloves of fresh garlic (pressed), rice vinegar, molasses, brown sugar, thyme, celery seed, salt and pepper. (I don't measure, just add what looks to being close to enough, then taste it when it's closer to being done and adjust the seasonings.)
Will serve with cole slaw and cornbread with frozen corn niblets stirred into the batter.
(Husband just tasted the broth and said it's good. I imagine it needs around another hour and it'll be ready.)

(2,016 posts)with meatballs and hot Italian sausage. The rigatoni is in the pot now...

(22,767 posts)Yum! And I love to use rigatoni, but husband prefers angel hair so that's what I end up using most of the time. I do talk him into rigatoni once in a while, though.
Enjoy!

Enjoy, bif!

(146,218 posts)I'm going through our stores and fridge now. I think it may be quesadillas and some canned soup, unless I find something else in there.
Your dinner sounds great!

(22,767 posts)good for a quick delicious and simple supper. How was your night out?
Mine did end up pretty good. I never liked beans before marrying the husband, but he loves them so much that I ended up learning to cook and flavor them to where I can somewhat enjoy them, too. Of course it helps to have them atop sweet cornbread with a little diced fresh onion.

(146,218 posts)Had a really wonderful salad and a pizza with very local ingredients, including huitlacoche (corn smut). Nice company, good conversation.
It's good to know how to do beans. You can store them forever, cook big pots of them and freeze for later. Glad you have grown to enjoy them.
Have a wonderful evening, hippy wife.

(175,731 posts)I was loading the dishwasher this morning after breakfast (bacon, sausage, an egg and a banana) and my lower back seized up as was straightening up. Spent the day either in bed or on a heating pad and didn't feel like much -- or standing over a stove. It's feeling a bit better now.
I did have strawberry ice cream for dessert. Your dinner sounds much better.

(146,218 posts)DH has the same problem and I know what hell it can be.
Take it easy and remember hot/cold/hot/cold is the key.
Hope you are all better tomorrow.

(175,731 posts)Hardest part is getting up. I've only had this happen in the back a couple of times, so I guess I shouldn't complain.

(175,731 posts)At least I slept well.
hippywife
(22,767 posts)as sleeping can be one of the hardest things to do with a bad back. So hard to get comfortable in order to fall to sleep and then stay comfortable so the pain doesn't wake you up when you finally do.

(35,658 posts)RG cooked: 3 kinds of lamb; lamb roast, lamb sausages, and lamb chops.
Arugula salad with goat cheese.
Carrot-potato-parsnip croquettes.
Three different wines--an Italian white (I chose), an Israeli red (guest chose), and the best wine of all was the RG's choice, which I will post the details sometime soon because it was so spectacularly good.

p.s., yes, I was trying to post earlier but DU just went buggy on me; so slow. I gave up.

DU went down at least twice today and the second time was for 2 hours
On the day that Clinton announces (and I know that Skinner, at least, is a big Clinton fan) that seems a bit suspicious.

(35,658 posts)The one he fixed the other day--oh, I'm almost embarrassed to talk about it, it was so spectacular--
When I walked into the house that night after school, I saw on the stove a skillet full of golden-colored shrimp and next to it, risotto. It was made with some sort of tropical flair and was spicy. There was also this beautiful vegetable soup. It had such flavor. I don't know how he coaxes the maximum flavor out of anything he cooks, but he does.
The real shocker was when I went into the dining room, however. His "seafood appetizer" was a cold platter piled high with lobster tails, crab, salmon, tuna, and shrimp. There were two different types of sauces. That alone would have been enough for dinner....but no-o-o.
And the wines selected complemented the meal so well.
I really, really was dumbfounded. But happy!
And if you are ever in the NY area, you ARE coming for dinner!

I made it for lunch on Saturday. Wow, wow, wow. I had a red jalapeno, too! It was so hot it turned my cutting board red!!
I am excited about stir fries, too, and I am going to do many more of them, I'd decided. Then the RG (must have been reading my mind), bought me a new pan that is huge and perfect to use as a wok.
Anyway, this recipe is almost more like a salad when you get the coarsely chopped cilantro and scallion on top. The sesame seeds are a nice finishing touch. I did add a little hoisin sauce on the side because it was so hot. I liked the alternating hot/sweet much better.

(22,767 posts)And I love spicy, but husband not so much. However, I don't see why I couldn't alter it for a not so spicy version.
Bookmarked for asparagus sales I'm hoping are coming up soon.
Thanks so much!
