chili colorado, beef and barely soup, bbq beef chunks, etc

but if it is really good meat the shish-ka-bob choice would be mine too.

marinade in some red wine, oil, oregano, and salt and pepper

"plus it" with
Baby corn
Sugar snap peas
Sweet red pepper strips
Button mushrooms
Water chestnuts (option)
Top with toasted sesame seeds

Serve over steamed brown rice
Low sodium soy sauce
Maybe some (or a lot) of ground chili & garlic paste

marinate the beef and vegetables -- onion, bell pepper, zucchini, mushrooms. Grill. I will post my marinade here a bit later.

I love this dish and this cut is perfect for it.

Of course, 2 pounds would make enough for about 10 people, but maybe you do want to separate this into several dishes.
