What's for Dinner, Thurs., Feb. 5, 2015

Crab-stuffed mushrooms, using the same recipe I made a few weeks ago.

I seem to be enjoying the same things I've tried in the last month or two, but I think that's OK. If it was a hit, why not a second go-around!

I have some chicken legs in the slow cooker to make chicken broth for a future soup.

Oh, and another thing I want to try tonight is a vegetarian sandwich I used to make, but this time without the bread. The latest thing in the no-grain world is to use some other type of food as the sandwich bread. In this case, I would be doing breaded eggplant, which would be the "bread." The inside of the sandwich would be mozzarella, and I'd use a chipotle-flavored mayo. Maybe a roasted pepper or a roasted tomato in there, too.

1. Chili Rellenos

My first attempt at making them. They came out ok -- I think I could have made the batter a bit thicker.

I made the mistake of asking my husband to bring me back ONE green pepper from the store. What does he do? He brings me a bag full of poblanos! "They were on sale!" So I looked up a recipe, tweaked the stuffing since I had some ingredients I wanted to get rid of, and tried my hand at it. Here's the recipe should any of you want to try it (Keep in mind, this is for 15 poblano peppers so adjust your fillings accordingly!):

De-stem and de-seed your peppers, then char on an open flame. Place peppers in a paper bag so they steam well.

Filling:
1 small package of ground pork
1 small bag of frozen corn
1/2 - 1 cup of chunky salsa
1 bag of shredded jack cheese
Spices: salt, pepper, cumin and oregano

Brown your meat well and mix in the remaining ingredients.

Batter:
8 eggs, separated
1 cup flour (the original recipe called for 1/2 a cup, but my batter was rather thin, so I think 1 cup would do the trick)

Whip up the egg whites until nice and stiff. Mix in the yolks and flour

Stuff each pepper with 1-2 tablespoons of the filling. Dip into the batter and then into a frying pan until a golden crust forms.

3. Beef stew and crusty bread

I did defrost some chicken wings this morning, but now I'm not in the mood. The other day I made beef stew, which came out awesome. So, I'll polish off those leftovers tonight.

Cher: I made a pasta-less lasagna one night, using eggplant as the "pasta" sheets. Not knowing how it would come out, I crossed my fingers... I was surprised that it came out great. I fried the eggplant slices first, though I'm not sure if that did anything, since the eggplant absorbed the tomato sauce and returned to its original softness. (I was looking for texture.)
