Making the green tomato "mincemeat"-My house smells glorious!

It wasn't a bumper crop for green tomatoes this year, just enough to fill the large slow cooker. I will have enough for at least a cake and a few batches of cookies. If you haven't tried making this yet and still wondering what to do with your greenies, the recipe from All Recipies is my go to and very forgiving. Just use what you have on hand and adjust a bit. You really don't have to worry too much about measuring...I eyeball it all and I never had a bad batch. Some years I have so many greenies I make it in the big Nesco roaster.

The complete recipe is for the pie. But i just make the filling and freeze it for later. Google recipes for mincemeat cookies or cake and you are ready to bake.

How many plants have you??

I've tried to encourage the vendors at the farmers market to sell greenies. No success.

I had eight plants this year. Four in grow boxes which are fabulous btw. Living in PNW it's a rare year we see as much sun as we did this past summer so I had a bumper crop and it took a lot of effort to even keep up with putting good use to the ripe ones. My freezer is full of sauce! It helped too that my deck faces south and my house is white so the light and the long days really did the trick. In my old house I used raised beds and usually planted six or eight plants. I never was at a loss for greenies.

Today I do the cookies!

Cherokee green, two sungolds, yellow plum, sweet million, a brandywine, and an Auntie's german whatever.

I ended up with two big ziplock bags of greenies and a big ziplock of assorted, all in the freezer.
I use them in sauces in winter. I'd like more, to make dilled green tomato pickles.

Must make some adjustments.

I think I'll be getting more green tomatoes with end season. I've never made this, and I can freeze it until I do!
