What's for Dinner, Wed., Aug. 6, 2014

Another late night of teaching, so it will be chicken piccata and salad.

The chicken piccata is made with almond flour and coconut flour. Lemon juice, parsley, and capers.

For the salad, I'm using the salad dressing I made last night but could not use because I ran out of olive oil. There was more in the 'frig but I couldn't pour it. It is avocado citrus dressing with pine nuts and coriander in it.

I also hope to make more zucchini crust pizza. The prep is all done, so I'll prob'ly be up baking until 1 a.m.!

4. lamb leftovers

I put a 2 lb portion of lamb leg on the grill last night, after it had been marinating in balsamic, garlic and olive oil for 2 days. It came out awesome. Crispy on the outside, medium rare on the inside. Yum.

So, it is the rest of that tonight, with additional garlic mashed spuds and steamed green beans w/ lemon juice.
