4. I just made a cold cucumber soup and it's chilling!

Going to serve with some grilled chorizo (lady at the market grilled it and it is most delicious), blue cheese (big splurge), hummus and crackers.

Oh yeah, that's after I make a batch of tasty margaritas!

We are leaving the slip tomorrow and going who knows where for a week or so.

Here's a good one. We are so unconcerned with time that we just this afternoon realized that the clock we have on the boat is an hour behind (oops, time change while we were gone) and we've been completely out of sync with the rest of the world.

Peeled, deseeded and chopped up a couple of cukes.

Chopped up some a bunch of cebollas. Those are those little onions that are something between a regular onion and a green onion. Scallions would work find.

Squeeze one very small lime.

½ tsp salt, ¼ teaspoon pepper, 1 cup chicken broth.

Puree with stick blender.

Add ½ cup sour cream (you can use yogurt).

Chill!!

No stove, no oven and very little clean up.

And it's super yummy.

I look forward to getting out of this harbor. It's too stinking hot.

They are probably really similar, but the Mexican ones are very round.

Hope you are doing well and that spring is starting.

Spring is kicking and screaming to arrive, at long last. The crabapples in my building's courtyard (a protected space) are just starting to leaf. Stay cool!

My newspaper also had a recipe for tofu and mango salad rolls with spicy peanut dipping sauce. Very minimal cooking. It sounded good for a dinner on a hot night, but you would need to find rice paper wrappers and curry paste.

Even soy sauce is pretty outrageous.

I'm going to make a cold noodle with peanut butter sauce, but I'm going to have to fudge on a lot of the ingredients.

With roasted garlic mashed spuds, and oven-roasted asparagus (using olive oil and grated Parmesan).

Yeah, more comfort food. Really feeling sorry for myself with this illness, LOL.

And mashed potatoes.

It was pretty good but who knows, when you're sick your tastebuds don't work so well.

cbayer, your cucumber soup sounds terrific and I am going to try it this summer. I'm glad you are getting out of the heat!
