I lived in Miami for years. Try black beans, slow cooked with garlic, a little olive oil and bay leaves. Pour the beans over the rice and enjoy.

That might give us a starting off point...?

In the meantime:
You can add beans to salads
You can add black beans and corn to chunky salsas or add them to tacos or burritos
You can mash them and add garlic and olive oil (and other seasonings) to use as a dip or sandwich spread
You can make all kinds of one dish meals with beans and rice

I ? beans!

Cook tortellini and mix with black beans, chopped bell peppers, and cherry tomatoes. Add a dressing made of mayo, yogurt, and mustard. Mix and chill. It's great!

These red beans and rice are DELICIOUS!!! Tip: use small red beans, not kidney beans. They're just better.

cooked garbanzo beans
tahini
olive oil
garlic
lemon juice
Mash the garbanzo bean, mixx in tahini, add lemon juice, olive oil. I use a garlic press for the garlic.

You can use a blender or jut a fork to mash the beans. It pretty much depends on the consistency you want. I put sumac on top and eat with carrot sticks, cucumber, lettuce, bell pepper slices. You can use bread too.

Bean cuisine is a wide and varied thing: garbanzos, pintos, black beans, limas, kidneys, cannelli, borlotti (my current favorite) - and that's just some of the dried ones!

My go-to bean cookbooks are The Bean Harvest Cookbook, and the Rancho Gordo Heirloom Bean Cookbook.

Specific bean dishes?
-black beans: Cuban black beans, Morros y Cristanos (spicy black beans and rice), Oaxacan enfrijoladas (tortillas heated in pureed beans)
-garbanzos: hummus, garbanzo salad with cherry tomatoes and feta, falafel
-pintos: refried beans, frijoles borrachos (beans cooked with beer), vegetarian chili, frijoles charros
-cannellis: pureed white beans with garlic, white beans cooked with sage, Navy bean soup
-borlottis: pasta fazool
-limas: succotash, if you have fresh ones - an Amerindian dish of corn and beans
-kidneys: not my favorite, but they can extend chilis, or red beans and rice

And now I'm getting a strong craving for 3 Bean Salad!
