Anyone have a good cooked salsa recipe?

I want to can salsa this year (trying to use all fresh ingredients in the process) and need a recipe that has been tried.

Any help would be appreciated.

1. yeah. i want one, too.

 

have some awesome purple hot peppers that should make for some pretty salsa. whole rainbow of tomatoes, too.

3. Here's one

I didn't have enough ingredients for canning up a bunch of salsa, but did use this for a few jars of cooked salsa...it's very good and is quite popular on Garden Web.

9. Update on the Cooked Salsa for canning

Tried RedEarth's recipe (Post #3) and it was perfect! Made 15 4-oz. jars which should last until next canning season.

Bought Roma's, Jalapenos, onions and cilantro from the Vineyard Farmers Market from farms in Hanford and Kingsburg (local farming communities). The green peppers came from the garden and the salsa turned out to be a PERFECT use for them.

For anyone trying this recipe, use the "modified" version at the bottom of the page.
