2. I *love* cucumber salad!
I've made it with the clear vinegar/water/sugar/dill sauce and I've made it with a sour cream/dill or yogurt sauce. One thing I love to do with leftovers is make a cucumber sandwich - just some mayo or Miracle Whip and pile on the drained cucumber/onion mixture!

I love fresh dill, so looking forward to finding some to add to cuke salad.

4. I love the addition of some red pepper flakes. A little heat in contrast with the cool of the cukes
is awesome. Thai cucumber salad is similar, but adds ground peanuts and cilantro.

5. I've NEVER made knish, but HAVE made cucumber salad, which I may make for the 4th;
menu will be simple as it'll probably just be me. Let us know how the knish works.
