What's for Dinner, Sat., May 14, 2022

Vegetable soup, made with roasted vegetables.

Will have tortellini in it. Herbs, parsley, marjoram, a little rosemary. Chicken broth base.

Then I'm thinking to make some herby sweet potato hashbrowns. Made this a while back and they were so good.

I'm thinking of also putting some garlic-pork sausages in the slow cooker to go along with the soup.

Are your herbs fresh or dried? I grow mine in the summer, but use dried in the off season....

I put in an elevated raised bed last fall and got it set up for herbs. I recently put in rosemary, marjoram, oregano, parsley, and thyme. Growing in an adjacent windowbox are chives. In other raised beds I have dill growing all over the place because I like it so much.

Over at the community garden I have a huge sage plant. Mint is there, too, as well as lots of cilantro.

I need to get a tarragon plant next week.

I'm so happy to not have to purchase herbs anymore!

Or, more accurately, spaghetti squash w/ a homemade tomato/meat sauce
simple side salad


I didn't make dessert. There are apples.


I also made a BIG pot of homemade chicken and vegetable soup. (Sis gave me a chicken carcass that had a surprising amount of meat left on it.) Most of it will go in the freezer.

I got some spanish chorizo at Whole Foods and looked up a pasta dish or something to make and found this to try:

I'm using regular pasta instead of rice. It's simmering away now, and smells really great.

with a meatball. I just ate a meatball cold from the fridge while I was heating his up.

I just had a small piece of pound cake with fresh strawberries I sliced up and sweetened with stevia earlier.

just do it! Sounds so good.

I made a crustless quiche (red onion, green pepper, mushroom, sliced tomato, serrano pepper, gouda and cheddar cheese), and that is what is also for breakfast this Sunday morning, along with some bacon and hash browns.
