What's for Dinner, Sat., Jan. 8, 2022
Eggplant parmesan. Marinara sauce, mozzarella, parmesan over the breaded slices. Fresh, chopped basil over the top at the time of serving.
Leafy green salad to go with it. Probably just scallions to go with the greens. Caesar salad dressing. Tangerines and chocolate for dessert. Decaf coffee.

1. Pasta
Green salad with iceberg lettuce, red onion, sliced tomatoes and almond slices topped with a Balsamic vinaigrette.
Cappellini with puttanesca sauce. Garlic bread. Klondike bar for a treat. Early to bed as tomorrow will be a busy day. |

3. Cincinnati chili made with ground turkey.
With onions, cheese, no beans. Some oyster crackers on the side. There’s as many opinions as there are recipes, but I’m happy how it turned out.
Dessert? Maybe a small piece of chocolate edible before bed. 😴 |

4. leftovers
There's some scalloped potatoes left (with kielbasa) from Wednesday, And there's some spaghetti left over from whatever night it was when we had chicken parm

6. I had some Sushi and was still a bit hungry so I used some leftover pork roast and
made a gluten-free Cuban. I have been getting this really good bread from a bakery in Brooklyn...they send it out overnight and I make a big order and freeze it...so I layer leftover pork, swiss cheese and pickles on a really good gluten-free roll spread it with mayo and mustard...and grilled it...used my black cast iron pan to flatten...turned out great. I had an orange a few chips to go with it.

8. Halibut with a deviled crab topping
and a lemon butter sauce on wild rice. Green beans in a macerated shallot vinaigrette.
This the first meal I’ve felt like cooking since getting Covid a week ago. I’m starting to feel like myself again. |

12. This is so lame.
I *was* planning to make honey-mustard pork chops, even had them out, waiting for them to come to room temperature.
But I made a mistake. Around 6, I decided that I *had to* have a mug of hot cocoa, the thick and rich variety with milk. And it was good. And it totally killed my appetite. The chops are back in the 'frig. My Bad. |
