What's for Dinner, Mon., Jan. 3, 2021

Tonight I'm having another dinner I'd planned over the holidays but again, I made too much food so it went to the refrigerator. Chicken fingers with various sauces.

Macaroni and cheese.

Even though it's freeeeeeezing cold out there, I went out to pick the last of the arugula and some dill that was in an open bed. I still have some dill in a protected bed.

I might use the dill in a cucumber salad tonight.

Dessert will be a small slice of pumpkin pie, heated up, and with whipped cream on top. Decaf from the fresh pot I made today. French roast dark.

Comfort food on this cold, cold night.

1. Experimenting in a hotel room

We were driving home to NYC but the snowstorm forced us to hunker down in Dover, DE. We still have some food left in our cooler so hereís what weíre improvising.

For an appetizer, Jarlsberg cheese and crackers. There are some purple seedless grapes left, too.

Main course will be a NY strip steak cooked in a microwave oven! Iíve done this before and itís tricky but doable. Baby potatoes and steamed broccoli for side dishes.

Chocolates and red wine for dessert.

Hopefully, the roads will be clear tomorrow.

8. I was wondering about your trip

Glad you posted, that you're not stuck in a car on the road somewhere, and that you had the makings for dinner with you. Mic'ing a steak is definitely a challenge and I'm guessing your technique will be to do it a minute at a time.

Once, probably 15 years ago, the RG and I had an adventure like that. It was cold and the RG had a 4 wd truck at the time. He wanted to drive it up a mountain and once we were up there, fix a fire and cook a steak over the fire. The area was snow covered.

We got up there and realized we'd forgotten our credit cards. I think between us we had $14! And we weren't about to go without wine!

So we made our purchases and headed to the mountainside where we fixed our meal. The RG is a bone fide mountain man and he had a blazing fire going in no time at all. I remember this as one of the best meals of my life--maybe beause we were hungry.

Anyway, glad you're safe.

2. Spaghetti with my hubby's homemade sauce.

Green salad (Romaine lettuce, arugula, cucumbers, tomatoes, and ripe olives). Balsamic dressing.

Garlic bread

Chianti

And a wee bit of my favorite Haagen Dasz ice cream, Rum Raisin.

3. Just got back from the grocery store before the roads freeze up again

Iím going to have a big olí burger (no bun) with cheddar on top and a salad. Havenít had red meat in a while and am craving it.

This is the second store Iíve been to this week with little to no fresh salad greens. All they had (besides kale) was 4 containers of local, hydroponic red bibb lettuce. Looks pretty tasty even though I paid through the nose for it. Was really craving spinach, but there wasnít even any frozen available. No mushrooms, either. Or milk (that one is likely due to the usual bread-milk-tp freakout when snow is coming. We got 6Ē last night).

For dessert: Butterscotch and Wertherís. Iíve still got a lot of candy!

Edit: Itís Red Butterhead lettuce, not Bibb.

6. We're gonna have a pizza

I think there's a pepperoni pizza in the freezer. I'll add peppers, onions, garlic and extra cheese.

I baked some oatmeal cookies for dessert.
