Related: About this forumHad some extra Costco sliced grilled chicken breast needed eatin' so ... tortilla soup!
Course, there's no actual tortilla in it (trying to watch the carbs ATM), but there is a bit of frozen corn ... plus lime juice, avocado, cilantro, black beans, peas, and Mexican grey squash ... so overall I think this counts as tortilla soup. Also, it's cloudy cause there's some pepper jack melted in!

I fixed a big pot of split pea soup today and froze half. Vegetarian - no ham.I love homemade soup. Now I only have to figure out what wine goes with it

(17,086 posts)I'm going to make a pot of that sometime after the weather turns cooler. It's 70 degrees here, so I don't want soup until it gets down into the 50s, at least. You need to see if Costco sells those low carb tortillas. I get some at Sam's every week. Whenever I want chips, I cut each tortilla into several wedges and then toast them in the oven. I'm sure you could cut them into strips and do the same thing so you'd have some for your soup. They're called Mission Carb Balance tortillas. I get the flour tortillas, but they sell different kinds. They're only 4 net carbs per tortilla.

OTOH, I use the others for street tacos all the time

(95,066 posts)But I have to say, I laughed at the OP title. It's like a text I got from a buddy the other day when I asked if they had embarked on an intended long drive yet. They responded with, "Yeah, left mid afternoon and the tow truck got me home by sundown."
Which left me laughing for some time.
Enjoy the soup, made me hungry, now I have to rustle up some dinner.
