What's for Dinner, Wed., May 26, 2021

I started off by having an appetizer of "veggie tacos" with the 8 children in my after-school gardening class. We always eat a vegetable and then we go plant it.

Today was school-grown lettuce with daikon radish filling. On top was bagel seasoning and Ranch salad dressing. The lettuce is the "taco shell" and the daikon, a very mild radish, is the filling. I earlier sliced the daikon on the mandoline, put in ice water to chill it. The daikon is very crispy when done this way.

It is so much fun to see children say "I want more," "Please give me more radish." I have one little boy who professes to hate vegetables but he sat at the table for half an hour eating lettuce leaves! All of them, every single one, loved the veggie tacos. I try to do vegetables they've never heard of.

OK, so that was my appetizer. Now as for what I'm having later, it will be eggplant parmesan.

And for dessert, rustic berry tart with cold iced tea.

p.s. in this case we won't be planting the daikon until school resumes in the fall because it is a cold weather crop.

1. Pork chops

I simmer 2 cans of Trappey's Jalapeno pinto beans, some KC Masterpiece BBQ sauce, a little brown sugar, chopped onion and garlic, and some chicken stock. While bringing it to a simmer, I sear both sides of the pork chops, then put them in the beans. Cover and simmer for 20-25 minutes.

The pork chops are so tender and tasty, and the beans are great with them.

Stir Fry: Hot spicy shrimp, mixed mushrooms, scallions, black radish, ginger, garlic

Salad: Microgreens, sunflower shoots, celery, scallions, buttermilk blue cheese dressing

Side: Roasted cherry tomatoes in red wine vinegar

I can't believe we're eating this tonight as it's so hot, but we're expecting some storms to come through so the temperature may drop before it's time to eat.

I prepared the ground meat last night, and I made the mashed potatoes this morning. So at this point, it's just a matter of warming everything up.

I went over to Dad's and made him and Sis some stuffed peppers and a big salad.

There's still frozen yogurt if we want dessert.

(Al is concerned about his diabetes, so he has asked me to quit the baked goods for a while.)

7. Would watermelon radishes work in the school garden?

They taste just like regular radishes but are so visually interesting. I got some last Saturday at the Farmers Market, but I think the grower grew them in the greenhouse.

We had chicken thighs with a garlic-lemon sauce over spaghetti, and a side of green beans. My son used bone-in, skin-on thighs instead of the boneless skinless called for in the recipe. They were pretty good, but thighs are not my favorite.

Man was it good.

Went to Steak-n-shake for lunch a couple of days ago. I sat down and ordered the usual - a double combo. A few minutes later, a woman across the isle from me got her plate. It was chili 5-ways, or chili-mac. I realized in that instance that she had out ordered the entire restaurant. I had to make this meal. My wife was busy working last night (Wednesday) when I got home from work so I made it.

Chili cooked down until it was pretty thick. I made it with onion, garlic, hamburger, chili powder, cumin, and salt. I added a chunk of frozen bone broth to it as well. I made some spaghetti to pour it onto. Served with diced onion, diced jalapenos, and grated cheese. Yum.
