They released one batch right after 8pm...and they say they won't release any more until late Wednesday afternoon.
What's the big hold-up?

till 8, so a large fraction won't even come in till tomorrow.
What's the rush?

People want a relatively quick result to be announced.

Cycle time to count then release updates. Besides it's just a primary for the most part.

On election night, they count what they've got--ballots mailed early enough to arrive, and those from drop-boxes;
Then they'll count any newly arrived ballots later in the week (Friday in my county);
Two or three weeks later they'll count the stragglers and declare the results.
