I canned 4 quarts of zucchini in tomato sauce.
I also canned 4 quarts of zucchini dill spears. (think zucchini pickles).
I also checked the sauerkraut I started fermenting the other day, and it's delicious. I'll separate it into smaller jars tomorrow & give my brothers and a couple of neighbors a jar.
Between the food bank & a program called Produce to People, I had five 4-5 lb. zucchinis and 4 heads of cabbage. I'm not going to waste it. I have made 2 loaves of zucchini bread. I have 2 zucchinis left. I'm going to put it through the food processor, freeze it and make bread later this year.

(4,033 posts)Mom never canned, nor my grandma or aunts. I decided two years ago that it was something I wanted to do, so I got a pressure cooker, vegetables, went online and read what I could.
Though my grandma to my knowledge never canned, the sauerkraut I made I was told by my mother was how my grandma used to make it.

(4,033 posts)I have satellite radio, so I listen to the Bridge ('70's music), I like Springsteen, Folk music (Pete Seeger & performers from the '60's). The Blues can be heard emanating from my car. I guess what I like Is when I understand the words and the songs gives me a story.

(35,422 posts)Love everything about it. I love the aromas and the beautiful, clean, sparkling glass jars resting on towels after being taken out of the hot water bath.
Since I have glass in my kitchen cabinets, I always arrange to have home canned goods showing in the front.
My mom used to can. In the subsequent cold, snowy winters, I recall being sent to the basement to "get a can of tomatoes." Or green beans or vegetable soup or tomato sauce or jam or jelly.
I've done some canning myself, but not recently. It's a very fulfilling activity with satisfying results.
I would like to recommend my favorite recipe, zucchini crust pizza. I make this once a week, in season or not. I use it for breakfast (top it with roasted tomatoes and sausage). It accompanies soups. And needless to say, it makes a great pizza crust!
