but then again I don't like salmon.

I do however make it for my wife and kids who love it.

If I'm grilling it over charcoal I'll usually do some asparagus on the grill and either rice or roasted small potatoes and garlic.

The same rice used inside sushi rolls. It's sticky, vinegary and sweet...it pairs well with the sweetness of the teriyaki while complementing the savory taste of the salmon. I'd probably serve this with pickled cucumber as someone else suggested, maybe also (or instead) with a salad of shredded carrot and daikon topped with an umeboshi dressing.

The rice is not difficult but can be time-intensive. (It entails a bit of "cook, then cool" waiting. Also, you need a non-metal bowl and utensils.)

A chilled slightly-fruity saké would be a nice accompaniment if you're drinking or perhaps a fruity tea or herbal tea if you're not. I usually just drink water with my meals, here with a slice of fresh cucumber in the water.
