Im currently reading a book about Caribbean culture, generously packed with delicious recipes for an astounding variety of Caribbean foods.
Thought Id get in the spirit with a tropical beverage, a Captain and Ginger; spiced rum, simple syrup, and Ginger beer.

(7,603 posts)Came across a recipe for Coquito- a traditional Puerto Rican holiday eggnog style drink with rum and coconut milk. In the mean time, settled for some sangria with dinner.

Tenderized filets of beef, marinated in red wine, garlic, onion, some cardamom, and a pinch of ginger. Pan-seared, then skillet grilled in light olive oil, rosemary, and a sprinkling of dry sherry.
Served with brown rice and black beans, mixed vegetables, and fresh sliced melon.
Margaritas or rum punch to drink.
Its different every time, but always delicious
