some fruit and more caffeine to keep it up.

I know, pitiful me. But this is real life for a lot of us. At least I will take a break to walk with pup and see the lights.

I'll be by myself this evening because TJ will be off to work at the Medical Center.

I'm having leftovers. A comfort food meal of roast turkey breast on an open face sandwich with mashed potatoes and green beans. Lots of homemade savory gravy to top the mashed and the sandwich.

I love potatoes, shouldn't eat them all the time because they trigger my inflammation, but I love me some tater tot casserole, potato salad, mashed, .....

I had an 18 lb Turkey for 5 ( can you say leftovers?), ham, dressing, broccoli casserole, corn casserole, chocolate fudge pie, apple pie, sweet tea.

Tonight I'm going to smoke a bowl of herb, eat more pie and a turkey sandwich.

COMPANY POTATOES


1 2lb. pkg. frozen hash brown potatoes
1 stick butter or margarine
1/2 c. finely minced onion
1 can cream of chicken soup
1 pint sour cream
1 t. salt
pepper to taste
2 c. grated sharp cheese
1 1/2 c. finely ground corn flakes
1/2 stick margarine, melted
PREPARATION

Potatoes: Thaw potatoes. Melt butter and mix with potatoes. Mix in onion, cream of chicken soup, sour cream, salt, pepper, and sharp cheese. Put in a greased large casserole or 13"x9" pan. Topping: Mix corn flakes and melted margarine. Spread over casserole. Bake at 350º for 45 - 60 minutes.

Latkes, bread, spanakopita, chocolate cake
Last night we had lasagna and all the usual fixings. Plus cookies, cheesecake, pumpkin pie.
I am never going to eat again.

Just green beans and potatoes.

I recently gave up meat and there weren't enough sides to satisfy me.

than our usual "second Thanksgiving meal" for Christmas this year.

Two entrees: roast beef and salmon stuffed with crabmeat and shrimp stuffing
Spinach mashed potatoes
Roasted Brussels sprouts with bacon
Relish tray (olives, raw veggies, etc.)
Wheat rolls
Dessert was peppermint stick ice cream with fudge sauce
and a giant tray of homemade cookies (I start on those in November)

It was a hit with my guys! (My family consists of me, my hubby, and three grown sons)
