Food of the gods IMO.

And it's a twofer - I love a good steak, but with the general acceptance of low-temp cooking we can make old dairy heifers the tastiest option. Seriously, I got some short ribs off a retired milk cow from a farmer friend and put them in the circulator for a day and a half, one of the tastiest pieces of beef I've ever eaten.
