Nation's bacon reserves hit 50-year low as prices rise

Source: Cincinnati Enquirer

The country's bacon reserves are at the lowest levels in half a century.

In other words, pig farmers can't keep up with the world's sizzling appetite for those fatty, smoky strips of sheer eating pleasure.

The Ohio Pork Council, a Columbus-based non-profit, reported Tuesday that demand for frozen pork belly, frequently made into bacon, is outpacing supply.

“Today’s pig farmers are setting historic records by producing more pigs than ever,” said Rich Deaton, president of the organization. “Yet our reserves are still depleting.”

Pork Bellies are a commodity traded on the CME.
We better have bacon reserves. It's the only way to keep Bubba and Scooter in check.

I'm very much a creature of NYC and Washington DC, but have gotten older and now live with my son and his wife (well, OK, in a house behind their house).

Anyway, I am now a resident of very rural, desert, New Mexico.

During a morning walk in the fall, I saw what I thought was a hippo. It had to have been 500lbs.

It was ripping the roots out of a desert willow tree. He glanced at me and then continued about his business.

Pretty nasty animal. And obviously destructive. Later, I noticed the tree had fallen over.

I am, however, amazed at how they can basically live anywhere.

And thus not terribly big on hunting for sport. Or swine, for that matter.

But we are happy for others to have at it.

The natives (and I mean natives, as in, Apache) opine that they are not good to eat because they have some sort of infection.

Very lean, looks like ham, tastes like bacon. American style bacon just isn't the same anymore. Hard to get good bacon anyway - some of this stuff cooks up strange. Instead of browning, it turns sort of a yellowish tan.

https://www.bloomberg.com/news/articles/2014-10-06/bacon-why-americas-favorite-food-mania-happened

Bacon has always existed, yet it seems to have gotten into everything from cocktails and ice cream to personal lubricants and soap. Bacon soap sounds disgusting. They've even got celebrity chefs claiming bacon is the cure for dangerous veganism. RW racists claim bacon is patriotic and people who don't eat it should not be allowed in our country.

People add bacon grease to things too. It's been popping up in tv shows as the secret ingredient fictional characters put into spaghetti, kale, corn cakes, etc.

I've always felt it was bit nutty. I occasionally have a strip or 2 as a brunch food and will put some into collard greens but people have gotten out of control lately.

They maintain family structures. They can develop vocabularies. They express emotion.

So I read "Nation's supply of enslaved sentient beings bred in horrible conditions for food hits 50-year low."
