The proposition that no one was observing the winter solstice before Christianity came along reflects a special kind of arrogant ignorance.

It's highly unlikely that it is the real date. The whole thing with the shepherds tending their flocks at night is something they do in the lambing season, which is in the spring.
It is most likely the date was set to coincide with two Roman holidays, Saturnalia and Sol Invictus.
