3. I don't like many veggies.
I don't like raw veggies. I don't like salads. The veggies I DO like tend to be starchy ones, which are not on my diet plan for now (corn and potatoes, for example). I have found spaghetti squash to be an OK substitute for pasta at times, though the water in the veggie will make any sauce served with it watery pretty quickly. Probably because of my upbringing, I mostly like unhealthy ways of eating veggies... I like broccoli best with melted cheese or in a gooey casserole, for example.

What I would really like are some suggestions for relatively easy to prepare, low calorie, low starch and TASTY veggie recipes to have as side dishes, or alternatively, something with protein and low starch veggies in one dish. I have looked at a lot of recipes myself, but any tried and true suggestions would be welcome :-)

I really don't like most veggies, though I prefer fresh to cooked. But I'm always looking for ways to sneak them into my diet.

5. roasted asparagus, it's easy and yummy.
preheat the oven to 425F

a pound of medium stemmed asparagus, medium to thin works best, put the asparagus on a baking sheet and then spray the spears with an olive oil cooking spay, pam makes one and then liberally kosher salt and pepper them, roast for 12 minutes or until fork tender.

When i'm having a "Off the program" day i them put bacon and feta cheese on the top.

Title: Roasted Summer Vegetables
Categories: Vegetarian, Main dish, Low-fat, Vegan
Yield: 6 servings

1 Red pepper;cored, seeded &
-cut into strips
1 Yellow bell pepper;cored,
-seeded & cut into strips
2 Red onions;peeled & cut into
-wedges
2 sm Summer squash; ends, trimmed
-cut into 1/2" thick strips
2 sm Zucchini; ends, trimmed, cut
-into 1/2" thick strips
4 Garlic cloves; peeled &
-thinly sliced
1 tb Olive oil
1 tb Oregano, fresh; chopped -OR-
1 ts Dried oregano
-salt & pepper to taste
1 tb Balsamic vinegar

"Few people think of roasting summer vegetables in the oven, yet high
heat keeps them juicy and flavorful. Lightly seasoned with herbs and
a touch of olive oil, this dish cooks quickly and is excellent either
served hot, at room temperature or cold."

Preheat oven to 425F. In a large bow, toss together peppers, onions,
squash, garlic, olive oil, oregano, salt and pepper. Spread the
vegetables on a baking sheet or metal roasting pan and roast for 20
minutes, or until tender, stirring several times. Transfer to a
serving bowl and cool slightly. Add parsley and vinegar and toss
until mixed. Taste and adjust seasonings. SERVES: 6

58 Calories per serving: 2 G Protein, 3 G Fat, 8 G Carbohydrate, 271
Mg Sodium, 0 Mg Cholesterol

10. but what do you do to give it more flavor?
The ways I like it best are the least healthy, like butter or cheese sauce. On it's own, I just have to force myself to eat it.

11. look into seasonings that you like
there's always sea salt, fresh ground pepper, chopped chilies, garlic, ginger, soy sauce, fish sauce, oyster sauce, curry powder, masala powder, cilantro, basil, olive oil, etc.

I think a little real butter or low-fat real cheese (like feta) is fine in moderation but use your own judgement.

12. I love steamed broccoli
with fresh lemon juice squeezed on top, and a bit of butter melted on it, with salt and pepper. Its simple, but really yummy! :hi:

in the crockpot!
Use a large crockpot, spray with olive oil spray and add:
1 med to large eggplant, peeled and cut into chunks
1 or 2 zuchinis, cut into chunks
about 1/2 to 1 cup thickly sliced carrots
1 green bell pepper, cut into chunks
1 med diced onion
1 tbls minced garlic
2 ribs celery, thickly sliced
freshly ground black pepper
fresh or dried basil
fresh or dried savory
allspice, a dash or two
fresh or 1 large can tomatoes, diced
1 jar your favorite spagetti sauce

Add to crockpot in order given and cook on low overnight and all the next day, stirring occasionally. Serve with a small side of whole wheat pasta and little crumbled non-fat feta cheese on top.
Feeds an army!

16. That sounds wonderful.
I wonder if it freezes well? There are only two of us here so I'd either have to cut the recipe or freeze it, OR, ... take it to a potluck at work.

I don't know about freezing it, I have never tried. But there should be no problem in trying! If it doesn't work out, make half a batch next time. Bon Apatite!


PS: also, if I have a bottle of red wine open, I add about 1/2 a cup. Adds a great flavor!

Tomatoes. I discovered, this summer, that I LOVED them.

Sometimes I'd look for those heirloom types, the yellow and purplish ones etc., but plain old red tomatoes from the farmer's market were good too.

Any vegetable in season, you can't go wrong with.

Also, Outback Steakhouse has an unexpected treasure: baked sweet potato.
