"Aging" Peppers?
I submit:

if you have a jalapeño plant, and you leave the fruit on the plant long enough, your green pepper will ripen into a delicious fiery red.

I have found: if I leave a grocery store green pepper on the counter long enough, it, too, will turn red - but shriveled.

Is there a method to hasten the ripening w/out shriveling the poor dears?

1. Use a paper bag and an apple
Put the apple and pepper into the paper bag.

The bag will prevent some of the moisture from leaving the pepper, and the apple emits ethylene gas which turns the pepper red.

It won't be as successful as ripening them on the vine, but it should partially ripen them.

the warmth from the fridge will hasten the changing..I do this with avocados and tomatoes as well
