I'm bored with the "marinate and grill, serve with bakers, salad, bread" route

inspire me dear foodie friends.......

1. Pan sear and finish in the oven
Serve with sweet onion Bearnaise sauce: http://southernfood.about.com/od/saucerecipes/r/bl60526a.htm

It doesn't matter what the sides are with a combo like that.

2. Scandia...

get the steak to almost done - any way you like is fine
mix equal parts blue cheese and good butter - add finely chopped onion
and slather over steak and place under the broiler until lightly browned

oh, yummmm

leftovers are wonderful sliced and added to a green salad - first overs would be great too
