Roasting on a rack

A few months back I got one of the racks shown inside this pan. I wish I got one decades ago. No more "Roast Chicken Sittin' in the Goop" dinners. I love it. Nothing I used to rig up works as well. I'm looking forward to making tomorrow's roast lamb on it. It's coated for easy clean up.

2. The really good racks like that come with the roasting pan

which is where I got mine.

Kitchen shops sell a collapsible job that'll raise meat out of the pan but it's a bitch to clean around the hinges.

3. I found one at Bed, Bath and Beyond

There's a store near us and they sell them without the roastng pan. Be sure to measure your pan to be sure the rack you like fits it.

Our roast lamb came out good yesterday. It browned all the way around.

4. I have a big one like that

I also have a stove-top smoker that I sometimes use just to roast meat. It is good to keep the meat out of the goop.
