I have a thing about lemon squares. They are one of my favorite desserts. :D

The simple pleasure of sweet/sour contrast is so enticing to me.
Well, I've bought enough of these things at the grocery store that I thought, why don't I make them? I'm sure I have the recipe somewhere here. And I did. I found it in a community cookbook from ages ago that my parents must have picked up at the State Fair in the early 80s.
**Warning** This makes a lot of lemon squares!
Lemon Squares:
Crust: 2 sticks margerine (I used butter. Julia would be so proud!) 2 Cups all-purpose flour, plain 1/2 C powdered sugar
Mix the above ingredients well. Mixture will be crubly. Pat mixture in ungreased 13x9x2-inch pan. Press evenly and firmly. Bake for 15 minutes in 350-degree oven.
While the crust is baking mix the following:
Filling: 4 eggs 2 C sugar 6 Tablespoons lemon juice 1/2 tsp salt 4 Tbsp flour Grated rind of 1 or 2 lemons, optional but gives more lemon flavor. (I'll say. I added zest from 3 lemons and the juice of 4, plus a dolp of lemon extract.)
Pour mixture over baked crust and return to oven for 20 minutes. Remove from oven, let cool a few minutes, then sprinkle with powderded sugar. Let cool before cutting into desire size bars or squares.
