this simple salad just came together in a perfect way

Three ears of sweet corn, cut and scraped from the cob
A can of rinsed and drained black beans
A can of black olives, drained
A half-cup of minced green onions
A cup of chopped fresh cilantro
A cup of small heirloom varietal tomatoes (yellow, orange, red)
Half a lime, squeezed
Two tablespoons of juice from a jar of jalapenos
A pinch of kosher salt

Toss all together. It was a perfect combination of flavors.

Topped with sliced avocados.

Served aside some spanish-scented rice, some ground beef seasoned with cumin and topped with grated pepperjack, and some blue corn chips.

It was really delicious. Nothing unusual, just good.

and I applaud the judicious use of the jalapeno juice.

But, I must ask, didn't you miss olive oil? Wasn't it too tart?

Or do you like tart? My sister only puts vinegar on her salads, and she likes tart..................................

3. oil would have masked the sweet milk of the fresh corn
It wasn't particularly tart -- just very fresh tasting.

And put in a corn tortilla.

That's pretty much my fish taco recipe, without the black olives just because I don't like them much.

That sounds good with ground beef and tortilla chips too.

7. Chopped bell pepper is an essential component to that salad for me.
Any color, cook's choice. Green works fine.

8. Green has a bitterness I don't care for,
but I have a friend at nearby grocery store, and if red or yellow are out at the salad bar, she'll find some for me!

16. Had something even simpler at a potluck
Just the corn, lime juice, and mint instead of cilantro. Your version looks pretty good, though.
