Any suggestions for an appetizer using fresh tomato and shrimp?

Any suggestions for an appetizer using fresh tomato and shrimp?
I am doing a house party for a local activist group I am involved with. I have bags of buy one get two free shrimp in the freezer and way too many tomatoes in the garden. What would be a tasty, not too labor intensive way to combine?

1. Maybe
1. Stir-fry small or chopped shrimp in olive or peanut oil with lots of ginger; while still warm, combine with tomato wedges, chopped romaine, cilantro, scallions and lots of lime juice. Good in pita.

2. Dust shrimp with chili powder. Sauté in butter or oil (or a combination) with fresh corn kernels and flavorful cooking greens (bok choy is good, as is watercress). Add halved (cherry) tomatoes and lime juice at the last minute.

2. Those sound great, but maybe too much work for this lazy girl.
Maybe tomato/fresh mozzarella salad with some shrimp thrown in for good measure? Or maybe just do the Tomato salad and leave the shrimp on the freezer. Hmmm....

And provide lemon wedges on the side?

But I would make a beautiful shrimp salad and serve it in tomato "cups". It's probably too labor intensive for your needs though. Go with the Caprese salad with the mozzerella, tomatoes and basil. Everyone loves it. Add some crusty bread and folks will love you!

7. WF here makes a cold tomato basil shrimp salad
that I just adore.

I've looked for it on their corp website but I don't see it.

it appears to have

steamed shrimp, peeled
rough diced (not too small) tomatoes, very lighted sauteed
diced shallots
capers
basil
olive oil and lemon juice dressing

10. We do a barbecued shrimp that would probably go very nicely with grilled tomatoes.
It's a knock-off of a recipe that the Ciro's restaurant chain cooked
when they were around. I don't have the recipe handy right now but
it involves shrimp and Worcester Sauce plus some other bits; Google
can probably find a variation for you.

The shrimp can be finished in a pan or glazed up and finished on a
grill. If done in the pan, I could easily see some diced tomatoes
following them into the pan to pick up the glazing from the pan.
The whole ensemble is then served on slices of lightly-grilled
Italian bread.

So am I, and that's why we've got the same bags of shrimp in the freezer. They're wonderful, by the way.

My personal preference - because I am very fond of simple tastes - would be to serve a big bowl of chilled shrimp with various dipping sauces, and, if you could get your hands on some really, really good - fresh is best - mozzarella and some nice basil, I'd fix an insalata caprese, slices of tomato and cheese, overlaid with basil leaves, sprinkled with olive oil, salt, maybe a bit of oregano,

That's my idea of a perfect Summer spread......................

14. I hope they're uncooked shrimp

because that makes it a lot easier.

If they're big enough put them in a marinade for a sec (to coat them - I like Lawry's Tequila & Lime marinade) and put them in a rack (if needed) and grill them) - nice grill flavor. Or do the same thing but on the stove top - direct heat.

If they're big enough, chop them into smaller pieces - maybe leave a few whole for fun.

Mix with chopped fresh tomato, basil, some garlic, and olive oil.

15. Buy the tomatoes and pre-cooked shrimp.
Get home.

Open tomatoes and eat.

Take shrimp and eat with cocktail sauce from a jar that you still had in the fridge and isn't spoiled...

don't forget to lock all the doors so noone can share...

works for me...
