simple and delicious chicken
So I had six fat chicken breasts, boneless & skinless.

I pounded each one flat into a shape about 6 inches around.

I salted and peppered this, then spread with garlic butter (fresh minced garlic, unsalted butter).

I put a couple of tablespoons of grated parm-mozzarella mix on a breast and began to roll as if an egg roll, tucking in the sides. After the first half revolution, I tucked in a whole stem of fresh rosemary, about five inches long.

Finished rolling, secured end with a toothpick.

Rolled it in Italian seasoned bread crumbs. Laid the rolls on an oiled baking pan.

Baked for about half an hour at 350.

Served with some linquine tossed with butter and minced parsley, and some summer squash browned quickly in a saute pan with a little butter, salt & pepper.

The chicken was delicious. Tender, oozy with cheese, redolent of rosemary and garlic.

2. You fixed a variation of
Chicken Kiev.

I had a husband who made the best Chicken Kiev. Also Beef Wellington. Not good enough to keep him, but those dishes were tasty.................

5. My late husband also made the best Chicken Kiev. He would
make the pats of butter with lemon juice and parsley and freeze, then wrap a thin slice of ham around the butter, and wrap the thinly pounded chicken breast around all to make a nice little package. IIRC, he had a chunk of cheese inside as well. It was always bursting with flavor. Happy memories...

that my same former husband used to fix. Also very, very nice, but so much work, only he would do it. I'm far too lazy.

6. This sounds great. I'm going to visit an old friend of mine this weekend and I always
cook at least one meal for her whenever I visit (she misses my cooking) and I'll bet this is what I fix this time. Thanks for the idea.
