I grilled 2 small pork loins today and used the following recipe to marinate and baste the meat while cooking (after brining it for about 1 hr.) The sauce is delicious and tastes "authentic." I also brought the extra sauce to the table, and the whole family thought it was wonderful. After searching high and low for a long, long time, I finally found the sauce that tastes like Carolina (South Carolina Piedmont style) BBQ. I also like Eastern (North) Carolina BBQ which is thin and vinegary and has red pepper flakes, but no ketchup.
Carolina Red BBQ Sauce
1-1/2 cups apple cider vinegar 1/2 cup ketchup 1 tablespoon packed brown sugar 1 teaspoon salt 1/2 teaspoon dried crushed red pepper
Stir all ingredients in small bowl until sugar and salt dissolve (can be prepared 3 days ahead. Cover and refrigerate.)
Hard to believe that anything this delicious could be so simple. I don't care for commercial BBQ sauces, and finding this recipe made me one happy BBQer. I can't wait to try it on chicken.
