Need suggestions....
I am trying to make a cookie out of a basic graham cracker crust recipe and need help with ideas to make it stiff enough to form into balls.

I don't want to change the basic texture at all. Just make it workable. I don't have any cookie molds, but I think that would have worked.

Any ideas?

1. did you see that suggestion in my farmers market thread yesterday?
I don't have time to look right now (headed out the door to veterinarian) but someone posted a link to an Australian cookie made from crumbs. Check it out.

2. Ah yeah! The sandy ball cookies. Thanks! I was looking for something that
kept the pie crust flavor and texture but those would be a good alternative. :D

3. Here's the recipe I use for Rum Balls
Rum Balls:

1 1/2 cups (140 grams) toasted pecans, finely chopped (hazelnuts, walnuts, or almonds can be used)

1 1/4 cups (120 grams) finely crushed shortbread or vanilla wafer cookies

1/2 cup (55 grams) confectioners sugar (powdered or icing)

2 tablespoons (12 grams) cocoa powder (can used Dutch processed or regular unsweetened cocoa powder)

2 tablespoons light corn syrup

1/4 cup (60 ml) rum




The corn syrup holds them together.


I've also used sweetened condensed milk as a binder with cookies that aren't so sweet...but the result is always a very sweet cookie.



I've also been playing with cake balls which are made from cake that's gone a little stale mixed with cream cheese frosting. Then you just wad it all up and form into little balls and dip into chocolate.

5. Thanks for the recipe! Those look very good.
I was wondering about sweetened condensed milk, but wasn't sure if it might be too sweet. I dont want to overpower the graham flavor.

I just found a graham cracker muffin recipe. I know I'm going to try that one soon too. :)

My disability doesn't cover dental.
If it isn't better by tomorrow I'll make a doc appointement and get antibiotics and take it from there...
