Does anyone have a copy of The Il Fornaio Baking Book?
Edited on Sat Mar-07-09 04:04 PM by Lucinda
I'm looking for a basic bread recipe to use with their biga recipe (which I have)
Edited to say I'm looking for the Pagnotta recipe. :)

Can anyone help?

1. Found what I needed. This is an interesting process.
They mix a biga and store just that in the frige to develop flavor and mix it with the other ingredients to make the fresh bread day to day. It's like the Ain5 technique, but only part of the recipe is pre-made.

4. Thanks! Did you ever work with their stored biga?
I really like the idea of the slow chill of the biga and taking out what I need daily.
