Asparagus is .99 a lb....I need ideas

So far I've made Ham and Asparagus Omlettes with Swiss of course
Asparagus and Chicken stirfry....Spicy thank you very much
Mac and Cheese with Asparagus and Ham (for the SO & kid....I don't do pasta)
Asparagus Soup

I'm having it roasted tonight with some Turkey

I've eaten it every day this week and I just bought another three pounds.


This orgy of Asparagus lasts only a few weeks and I want to make sure I go for the gusto.....


Wonder if there's an Asparagus Brownie recipe out there.....

Cream of asparagus soup - easy and delicious.

Wrap with a slice of bacon and grill - yummers.

It's 99 cents here, too, and really beautiful. I considered freezing a couple of pounds. Might just do that, although I have very little space available.

21. Alas I can't do the fried stuff....,.
But I'd be all over that idea in a NY minute if I could handle the calories. Then again, I'm making Asparagus gratin tonight. :wow: which probably has twice the calories and fat. :silly:

18. There's always cream of asparagus soup and asparagus quiche
Ever try grilling it? The outside caramelizes and turns it into a very different veggie while leaving the inside crisp.

I'm eating it until it comes out of my ears, too. I love it as a side with fish, any fish, just with butter and lemon, barely cooked.

Most of the time I nuke it, which preserves more of the flavor than boiling or steaming does. I am hauling out my grilling pan today for the rest of the haul.

This is the yearly asparagus orgy. There is no way I know to preserve it well and my childhood memories are haunted by the slimy stuff out of a can.

20. I grill it all the time
I have the really skinny ones right now which IMO don't stand us as well to the grilling. There is no better way to prepare asparagus than to grill or roast it with lots of EVOO and a little garlic.

Sometimes I bake it on a bed of onions which is also lovely.

I'm making an Asparagus gratin today. Just slicing it into chunks and baking it with a white sauce with lots of Parm thrown in.

Brush asparagus with olive oil and pop under the broiler or in a super hot oven for ? minutes. Sprinkle with grated parmesan cheese and pop it back in the oven to melt and brown the cheese.

That's my absolutely favorite thing to do with asparagus. But, that price - hell, even eating it raw would get old.

Why not make some summer rolls with it - throw in some leftover chicken, or some shrimp, with some other vegetables, some bean threads, a couple cilantro leaves? That would be quite yummy.

I'm hungry again.................

23. I actually made a semi- coleslaw with it on Sat.
I chopped it up really finely, mixed it with some green onions and mixed it with Mayo and a spritz of Rice Vinegar. It was lovely!

I'd never have thought of that, but when the season starts here, you bet I'm going to give that one a spin. Thanks!

It also like to stir fry asparagus, really fast, and then just toss it with a bit of black (or balsamic) vinegar and some sesame oil. That's very nice, too.

28. Asparagus Brunch Bread
Sounds good, I'm going to try it if the price ever drops on those lovely spears in NH...


1 lb (500 g) asparagus spears
4 oz (125 g) sliced (1/4 inch/5 mm thick) Black Forest ham
1 green onion
2 cups (500 mL) all-purpose flour
1 tbsp (15 mL) baking powder
1/2 tsp (2 mL) each salt and pepper
2 eggs
1-1/4 cups (300 mL) milk
3 tbsp (50 mL) butter, melted
1 cup (250 mL) shredded Asiago or old Cheddar cheese (4 oz/125 g)

Preparation
1. Holding each asparagus spear at base and halfway up stalk, bend just until stalk snaps at natural breaking point. Pour water into large skillet to depth of 1 inch (2.5 cm); bring to boil. Arrange spears in 2 layers in water. Cover and cook for 2 minutes or until bright green and still crisp. Drain; chill under cold water. Drain; set aside on towels.

2. Cut ham Into 1/4-inch (5 mm) wide strips; cut into about 1 -inch (2.5 cm) lengths to make strips. Thin end from green onion; halve stalk lengthwise and slice thinly crosswise. Set aside.

3. In large bowl, stir together flour, baking powder, salt and pepper. In another bowl, whisk together eggs, milk and butter; pour over flour mixture. Sprinkle with green onion and 3/4 cup (175 mL) of the cheese; stir with wooden spoon just until smooth.

4. Spoon half of the batter into greased 9-inch (2.5 L) square cake pan, spreading over bottom. Arrange half of the asparagus in single layer over top. Sprinkle with ham.

5. Spoon in remaining batter, spreading evenly. Arrange remaining asparagus over top. Sprinkle with remaining cheese. Bake in 375°F (190°C) oven for 50 to 60 minutes or until golden brown and cake tester inserted in centre comes out clean. Let cool in pan on rack for 10 minutes.

6. Invert wire rack over pan. Holding both tightly together, invert pan to turn bread out onto rack. Remove pan. Invert serving platter onto bread. Holding rack and platter together, quickly invert. Remove rack. Serve warm or at room temperature. (Bread can be cooled, covered with plastic wrap and set aside for up to 4 hours.)

Variation:
Bacon-Tomato Bread: Omit asparagus. Substitute. 1/4 cup (50 mL) chopped fresh chives for onion. Substitute 6 slices crisply cooked and crumbled bacon for ham. Sprinkle 1/2 cup (125 mL) thawed or cooked corn kernels over bacon. Top assembled dish with six 1/4-Inch (5 mm) thick slices beefsteak tomato before sprinkling with remaining cheese; bake.

Asparagus & Hash Brown Frittata

Preparation Time:

To make this exquisite egg dish even more hearty and delicious, just add chicken, salmon, cooked bacon, or virtually any of your favorite meats.

Schwan's® Ingredients and Steps

1/2 bag Asparagus (#779), cut into 1" pieces
6 eggs, beaten
2 cups Hash Brown Shreds (#753), frozen
1/2 cup Parmesan cheese, shredded
2 cloves garlic, minced
1/4 tsp. pepper
3 Tbsp. milk
2 Tbsp. olive oil
1/2 tsp. salt

Steps

1. Heat oil in a large skillet on medium-high heat.

2. Add garlic, asparagus*** and hash browns; saute 5 minutes; stir occasionally.

3. In large bowl beat eggs, milk, salt & pepper.

4. Add egg mixture to skillet; reduce heat to low and cover.

5. Cook for 10 minutes or until eggs are firm.

6. Top with cheese and continue to cook until cheese is melted.

7. Cut into wedges and serve.

(*** personal note - I would not cook the asparagus until step #4.)
