Whats for Dinner? ~ Saturday the 21st

We had a big breakfast brunch a couple of hours ago, so I'm thinking something uncomplicated for dinner.

Maybe ham steaks, homemade baked beans, and a salad with fresh bread.

What's for dinner where you are?

2. Hmmmm...
Well, I have some leftover cooked hamburger that I need to use, so I'm going to make a quick (less than an hour) tomato sauce with crushed tomatoes, onion, garlic, green pepper and spices, add the hamburger to that, and cook up some linguine, I guess.

I've got hellish cramps today, so I'm not up for anything super creative or time consuming.

6. Got cramps today too. It's looking like I'll be either 85 or dead before I'm over this crap.

11. Sorry you're owie today!
I used to get hellish cramps until I figured out that it was a breeze if I stopped eating meat 2-3 days before hand. It made a huge difference for me.

Course I don't have to worry about it at all anymore. One upside of chemo was early menopause. :rofl:

3. We're having some organic rib eyes, but the kids are getting ground buffalo -
you can tell we have our priorities straight. Were thinking about a movie and sushi, but just didn't have the energy to get all cleaned up for a night out. Will throw together a quick salad and toss some sweet potatoes in the oven. Found a new killer brownie recipe that I'm going to try. Been really hitting the jackpot when it comes to new dessert recipes.

4. That's what we decided on.
I got an organic ribeye from our coop the other night and it's marinating as we speak. Gonna bake some organic russets and not sure on the side. I would opt for a nice salad but I'm going to make a large salad with the turnip risotto recipe tomorrow night. I wouldn't mind but I can't usually get the other half to eat salad back to back like that, especially if one of them is going to be a full meal.

to C&B, Native. The unwritten rule around here is that if you mention a "killer recipe" you have to share it with all of us.

5. I'll be happy to share it once we've tried it out - when it comes to recipes
I don't trust anyone or any cookbook or any site - even if they have a flawless track record. I've got one of those super taster problems. My nose is super sensitive as well. A lot of stuff people love, I think sucks. I can spot a grain of nutmeg in anything.

the filo didn't seem as fragile this time. The recipe didn't have any spices, so I added dill and mint, like the last time I made it, and when I made kotopita. Also I didn't have to blanch the spinach, just chop and saute with onion and garlic.


I bought a pastry brush so it was so much easier to put oil on the filo, too!




God I love Greek food! :bounce:

9. I use my pastry brush soooooo often it's not funny. Love them!
Spanakopita sounds like a great choice. Yum. I do "Greek" flavors in so many dishes. I've been making ravioli with feta, spinach and black olives lately. :D

INGREDIENTS (Nutrition)
3 tablespoons crushed garlic
1 egg yolk
2 cups chopped fresh spinach
2 boneless skinless chicken breast halves
2 tablespoons basil pesto
1/3 cup chopped sun-dried tomatoes
1/4 cup crumbled herbed feta cheese
2 frozen puff pastry sheets, thawed

WHAT TO DRINK?
Sangiovese

DIRECTIONS
In a small bowl, use a fork to combine crushed garlic and egg yolk. Place chicken breasts in a shallow glass dish and spread both sides with egg mixture. Cover dish with plastic wrap and refrigerate 4 hours, or overnight (recommended).
Preheat oven to 375 degrees F (190 degrees C). Grease a baking sheet.
Working on a lightly floured surface, unroll one puff pastry sheet. Place 1/2 cup spinach in the center of the pastry sheet. Remove one chicken breast from marinade, shaking off any excess, and place on top of spinach. Spread 1 tablespoon pesto over chicken, layer with half the sun-dried tomatoes, sprinkle with half the feta cheese, and top with 1/2 cup spinach. Fold pastry sheet around chicken, using fingers or fork to seal pastry seam. Place chicken seam side down on baking sheet. Repeat steps with the second puff pastry sheet and remaining chicken breast.
Bake 35 to 40 minutes. Test for doneness by cutting through center of chicken breast; if juices run clear, chicken is cooked.

I think i'll just stick my probe in one of the breasts when assembling, and just set the temperature alarm.

Man, I love this stuff! We don't do the little bundles - too much work, lol.

Just take about 4 phyllo dough sheets stacked, brush with butter and roll up the ingredients inside, like a jelly roll. Brush with more butter. Bake as usual and slice.

(I like cooked sausage, shrimp, and/or bacon added to the ingredients and it makes a meal.)

Great Italian food for our once a month post-retirement dining out. We used to go out three or four times a month, but have gotten used to the new regimen.

28. We used to buy them for enchiladas and tamales occasionally
It made it possible to make Mexican food without any real advanced prep time. But they became really awful here, so now I just bake chicken myself.

25. Dehydration? How the heck did you manage to pull that off?
I'm terrible about not drinking enough liquids. The first sign that reminds me to drink is irritability. I had no idea that was a symptom, but mental irritability & depression are on the list. As soon as I start getting really snarky, I drink a glass of water & poof - the mood lifts almost instantaneously. If I miss this first sign, then I quickly progress to feeling "out of sorts" - don't know how else to describe it. Again, one glass of water & I'm back to normal. Pretty freaking weird, but works every time. If you google the symptoms for dehydration, it will blow you away. Read an article on this many years ago in some then popular healthy living mag.

It sounds very good! :) Do you make your own?
We have NO good take-out here, so we have to make everything not tourist related ourselves. LOTS of pancake sources around here, not so much of anything else. :)
