Protein bars Round #2
So, I got the first batch out of the way. While it has good bulk and texture, I'm definitely ditching the bean flour. It just isn't the flavor I'm after here.

I've got almond flour and coconut flour and I still have some of the hazelnut flour left. I might try a Thai-themed flavor. I do have some red curry paste. I'm wondering where I can get lime leaves. I've got lime juice and that might have to do.

This will be my weekend's entertainment.

I think my overall goal is to get to a kind of bisquik formula, so that I can make it up and just add different flavorings to it. Not there yet though.

BTW are you totally intolerant to Wheat or just the Carbs? I have a hard time with carbs and tend to stay away from wheat but I am able to tolerate small amounts and certain products like Dreamfields Pasta and Carb Quick. Carb Quick has been a life saver for me. I don't use it on a daily basis but for an every once in a while fix for flour it works for me.

2. I am sensitive to wheat
but I can have it, say 2x/week without it upsetting my stomach. However, it does give me mood and energy level dumps (fatigue, general depressive feeling), and a scalp rash, so I tend to stay away from it for those reasons.

It also isn't satisfying. While "bread"-based dishes are a good appetizer, all they really do is increase my appetite, much like sweet stuff. If I make them the center of my meal, all I do is continue eating. :crazy: Apparently I *must* have meat to feel satisfied.

So about the bars, since I want something that I can eat every afternoon, I'm trying to stay away from the wheat for this application.

That is a neat baking mix though, I hadn't seen it before. :thumbsup:

3. Sounds like you and I are in the same boat
The carb quick is great for making pie crusts, biscuits, pancakes even coffee cakes. They have a large recipe section. It's been a life saver for me. What I like about it is that it doesn't cause that carb spike for me and doesn't kick off cravings for more carbs. I use it along with the Dreamfield's pasta once or twice a week.

I've been eating these almost every day for lunch. The best 20 calorie food I've every had. I get it at the grocery in the refridgerated health section by the tofu.

They help bulk up stirfries and are terrific in soup

Until I thought about savory biscuits and savory breads. What a good idea. I'm surprised it hasn't been thought of and put forward more in stores. An excellent alternative for diabetics who are tired of eating sweet (artificially sweetened) protein bars.

I eat them a lot during the week and the sweet taste does two things: 2) fuels my hunger 3) gets tiresome. I suspect it's to cover up the slight unpleasant aftertaste of a lot of protein additives.

2) Research suggests that artificial sweetners increase the appetite, because while you might be consuming calories, you aren't *satisfying* your body with a real nutrient, so it goes searching for it -- you keep eating. I know I do. My idea is to not eat it period. I'd rather have a real dessert occasionally.

3) Protein bars that are just candy bar lite are really boring day after day. You really can only eat so many of them. I really want a variety of flavors.


You know, I didn't think about diabetics, but no reason why they should be left out. One of the reasons I'm doing this is to try to keep myself from becoming one as I get older. So it has to be

- low carb and wheat free (since I am sensitive to it)
- high protein
- savory

The idea of what final form this will take, I haven't worked out yet. Whether it's supposed to be more cake-like or more crunchy like a granola bar, I don't know yet.

This explains why so many of the people who drink a lot of sugar-free sodas are some of the heaviest people I know. The only time I ever use an artificial sweetener is if I order iced tea in a restaurant, which is very rare, and the Sweet n' Low just dissolves better than sugar. I figure once in a very blue moon isn't going to amount to much.

I'm really looking forward to hearing the latest results of this experiment.

You can always just go with Soy Chips. I eat Genisoy quite a bit and love the barbeque flavor in particular. They have a great crunch and offer a decent degree of protein too.
