Can anyone tell me how to make carrot-raisin salad?

Can anyone tell me how to make carrot-raisin salad?
I don't know what all the ingredients are/the proportions used. I'm interested in the one that has crushed pineapple in it. (They have that type at Chik-fil-A and Old Country Buffet.) I love that stuff and I'm guessing that it's easy to make.

1. This is from Luby's Cafeteria Cookbook
I've never tried it, but it says it's a "most requested recipe". Also there's a tip that says that to plump raisins and make them moist and tender, soak in water several hours or overnight in the refrigerator. Drain well before using.

Carrot-Raisin Salad (8 servings)

2 lbs. carrots, peeled and trimmed
1 cup raisins
1 cup canned crushed pineapple, drained
1 cup mayonnaise
1/2 cup powdered sugar

1. Shred carrots using large holes of grater. In a large bowl, combine carrots, raisins and pineapple.

2. In small bowl, mix mayo and powdered sugar until well blended. Pour over carrot mixture and toss lightly to coat evenly. Cover and refrigerate at least 2 hours.


Hmmmm, sounds good. I should try it myself.

3. Thanks. When they say "powdered sugar," do you know
what they mean? Are they talking about confectionary sugar? Since I really don't cook or bake, I'd have to buy some just for this. :-)

Any more recipes for it out there?

...altho that might be good. The classic carrot-raisin salad is grated carrots, raisins, mayo, a dash of lemon juice and a bit of sugar.

There's a carrot-pineapple salad made with orange Jell-O that was popular a few decades ago. That's all it is. Grated carrots and drained crushed pineapple in orange Jell-O. It's oddly refreshing.

4. It's good with the pineapple in it. Adds to the flavor nicely.
It took me a while of eating these salads to figure out what it was, then I figured out it was pineapple. I was pretty surprised, actually.

5. Powdered sugar
and confectionery sugar are the samething. It comes in 1 lb boxes and is only $1 or so a box. It also keeps forever.

7. My version
I think there's enough natural sweetness in carrots plus the raisins that the sugar would be a little over the top (at least for my taste - but I've had Type 1 diabetes for over 25 years, so my relative sense of sweet and sour may be different from other people). Most of the time I make carrot-raisin salad with just carrots, raisins, a little mayo and a diced up orange instead of pineapple and that's pretty tasty. I also use a fine blade on my mandoline instead of a grater which gives a little different texture, not so mashed up.

8. No sugar in my carrot raisin salad either.
None. The raisins and carrots are sweet enough for me. I like the pineapple as well. I think these fruit seep a little natural sweetness into the mayo.
