We cook them about 3/4 way in the microwave and then slice and grill them.

2. sweet potato buttermilk biscuits
We like those quite a bit.

Incidentally, the experts on food network say that anything we get in this country isn't really a yam, but a variety of sweet potato. Apparently we don't have any true yams.

Here's a Bobby Flay recipe for Sweet Potato Chipotle Soup:

Chipotle Sweet Potato Soup

2 tablespoons unsalted butter
1 medium onion, chopped
2 garlic cloves, minced
3 –4 medium sweet potatoes; peeled and cut in large chunks
4 – 5 cups chicken broth or stock
1/2 – ¾ cup creme fraiche or heavy cream
2 tablespoons diced canned chipotles
salt and freshly ground pepper


In a large saucepan over medium heat, melt the butter and sweat the onion and garlic for 5 minutes, or until translucent. Add the sweet potatoes and broth and raise the heat to high, bring to a boil, then lower to a simmer for about 30 minutes, or until the potatoes are done.

Remove from the heat; add chipotles and puree with an immersion blender or in batches in a blender. Add cream or crème Fraiche and stir well. Heat for a few minutes more, seasoning to taste. Serve in bowls sprinkled with chives or pepitas.

3. Bake and freeze
If you have any left over from other recipes, you can bake then and freeze in a zip bag. Then you can take them out, slice and brown in a dry frying pan as needed. I like to slice those in half lengthwise and brown in a cast iron pan.

Or cut up and add to recipes where you have sliced sausages and veggies for a meal in a bowl. Just substitute them for the white potatoes.

Sounds like you got a good haul. I suppose you could store them in a cold place for a while, too.

Btw, they make great fries - but I just slice thin and bake them on a cookie sheet.

4. I've been wanting to try these
with fresh baked sweet potatoes instead of the canned as listed in the ingredients. I haven't tried it either way yet.

pineapple chunks. I usually serve with some sausage or good smoked ham and a tossed salad.

Baked with pineapple chunks makes an easy lunch. For variety you can add a few pecan pieces or a bit of shredded coconut or maybe even some chopped dates. No need for butter/margarine or other sweeteners.

rum and pecans and cranberries - great at the holidays........gotta add just a little liquid to the pan and cover it to get them nice and tender. Great alternative to that icky overblown yams and marshmallows crap my mom foisted on us.

And of course, you can't get too much sweet potato pie, IMHO.

Roasted Spiced Sweet Potatoes
Adapted from Gourmet, January 2002

Active time: 10 min Start to finish: 45 min
Servings: Makes 4 to 6 servings.

1 teaspoon coriander seeds
1/2 teaspoon fennel seeds
1/2 teaspoon dried oregano
1/4 to 1/2 teaspoon dried hot red pepper flakes (the latter will make them quite spicy, so using according to your preferences)
1 teaspoon kosher salt
2 pounds medium sweet potatoes
3 tablespoons vegetable oil

Preheat oven to 425°F.

Coarsely grind coriander, fennel, oregano, and red pepper flakes in an electric coffee/spice grinder or with a mortar and pestle. Stir together spices and salt.

Cut potatoes lengthwise into 1-inch wedges.

Toss wedges with oil and spices in a large roasting pan and roast in middle of oven 20 minutes. Turn wedges over with a spatula and roast until tender and slightly golden, 15 to 20 minutes more.

12. Have you tried
baking them and then splitting them open and adding crumbled bleu or gorgonzola cheese? That is my absolute favorite way to eat them. Incredibly good! :9

8. Put them on the grill.
I use a George Forman-type counter top grill. First, peel the yams, then cut them up into strips approx. 1/2 inch thick. Lay them out on the grill plain, don't add oil, and grill until soft. Then put the cooked strips in a shallow pan, mist with olive oil, a little salt and any other spices that seem good. You could add brown sugar for a sweet treat :)

I also do a vegetarian sweet potato casserole with white beans and garlic. It is delicious and a snap to make. Let me know if you want me to post that, too.
