Quick and easy omelette
I make this for me and Mrs bearfan once in a while. It's easy. Melt some butter in a non stick pan



Add a some frozen hash browns and let them get softened up



Beat an egg or two



Pour them in on the hash browns



Wiggle and jiggle it until it slides around but don't let it burn. Burned eggs taste yukky. Slide it out onto a paper plate. This is the easiest way to flip an omelette. Hold the pan over the paper plate and turn both upside down.



Add some cheese



Roll it or fold it however you like your omelettes and slide it onto your serving dish which in my case is a paper plate so less dishes to do.



Sometimes I eat it plain and sometimes I like home made salsa.



Get your coffee and you're good to go for breakfast.

i had some of those yummy hashbrowns I made the other night that I just stuck on a cookie sheet and reheated with the egg loaf (as DH called it)

2. I want to try the hash browns the way you made them in the oven
It's hard to get them crispy sometimes.

3. they were as good the second time too
i used my food processor to grate them and just squeezed em like mad to get them dry. The rest was easy...

4. When I read the ingredients, I thought "fritatta".
I've made this before and it is excellent, but i use less cheese. I like crumbling crispy bacon onto mine. Or tranferring it onto a hot flour tortilla to be rolled.
