craving. . .stuffed portobello mushrooms
A local high end restaurant has these as an appetizer and they are exquisite and drizzled with balsamic vinegar.

I often marinate portobello mushrooms in balsamic vinegar and saute them and mix them in with all sorts of things.

I've done a search for recipes for stuffed ones and none that I found really appealed to me.

Does anyone have any suggestions or do I have to try to bribe the local chef?

I take the seasoned bread cubes, mix with onions sauteed in butter and browned sausage. Throw in an egg or two and maybe a chopped apple or some raisins. If you are looking for something without meat you can substitute the sausage for some spinach.

That's long gone.

It's a good idea for the next time a lobsterman wants to curry favor and get a better deal from my folks for blueberries or a Christmas Tree though.

I've got a recipe for blue cheese and crab stuffed mushrooms-don't see why it wouldn't work with portabellas.

6. I mix a stuffing of
white crab meat, minced shallots, crumbled gorgonzola, bread crumbs, parm cheese, melted butter, salt, pepper, minced garlic. Then I stuff each mushroom substantially and lay them in a glass baking dish. I pour some cooking wine in the bottom of the dish, not a whole lot. Top each mushroom with a small pat of butter (take one pat and cut it into fourths) and then top with your favorite shredded Italian cheese.

I'm sorry, I really can't tell you the amounts because I don't measure. I also can't remember what I bake it at and for how long. I just kinda wing it. If you can find a similar recipe on the net you could probably get the technical info there and use it.

7. Sounds a lot like the one I use
Sometimes for a slightly different taste, I use either Roquefort or Stilton.

8. I used make them with
pecans, breadcrumbs, and Worcestershire sauce. It was more than that; though. I'll see if I can find the recipe. I remembered it because I came across it again at christmas.
