I turned in 40 pounds of filet'd meat for processing. I had half of it made into hard salami sticks and the other half made into 50 - 50 smoked spicy links. Damn that shit is good. This will last me for a whole year.

1. WOW how fun!
my ex husband brought home a deer one year, I woke up to find it soaking in the tub LOL

we didn't get it made up, I just learned how to cook venison and negate the "gamy" taste

There is a gland on the back of the hind quarter that has to be cut off when you are skinning it.

5. I have never had venison.
Can you buy it somewhere or do I have to go out and shoot my own?

I wouldn't mind learning to hunt, but with two little ones, I don't know how I would find the time.
